Silica sol is a transparent solution of silicon dioxide, appearing as either a sky-blue or pale-white liquid. Its solid content typically ranges from 15% to 30%, and it is non-toxic, harmless, highly stable, and environmentally friendly. Importantly, charge neutralization serves as the key mechanism behind silica sol's effective use as a clarifying agent or flocculant in the beverage industry. In acidic fruit juices and fruit wines, negatively charged silica sol reacts with positively charged gelatin, enabling flocculation and clarification. Notably, one colloid can destabilize another, making it more susceptible to precipitation by electrolytes. When solutions containing colloids with opposite charges are mixed, they can even undergo co-precipitation.
